Jerusalem artichoke

Jerusalem artichoke is a plant that grows in temperate climates and is resistant to cold weather conditions. It grows particularly well in the Central Anatolia, Marmara and Aegean regions of Turkey, as the climate and soil structure in these regions are suitable for the development of yams.

When it is time to harvest, the Jerusalem artichoke roots are dug out from under the soil. Yields vary depending on soil composition, care methods and climatic conditions. Fresh yams, both raw and cooked, are used in salads, soups or dishes and offer a tasty alternative.
